Breakfast: Keep your stomach happy
In times of stress, we often forget to take care of our physical bodies. With deadlines, exams and projects due, actually consuming real food tends to diminish. We need to sleep more, eat appropriately and take care of our bodies. When stressing over school, take the time to make your body happy. Eat breakfast.
To recreate this breakfast plate, you’ll need:
Strawberries
Cantaloupe
Tomato
One egg
Vegan sausage, cut it small pieces
Tortilla
Get it together:
1) In a frying pan, heat a bit of olive oil and cook the egg. I made an over medium egg, but a scrambled egg would work as well.
2) Add the vegan sausage bits to the pan and cook alongside the egg. Be sure to toss the vegan sausage to prevent burning.
3) While the “meat” cooks, rinse and dice the strawberries, cantaloupe and tomato.
4) When the “meat” is ready, move the pan to the side and reduce the heat. Use the warm stovetop to warm the tortilla. Carefully set the tortilla on the burner and turn over every few seconds.
5) Assemble the burrito. Add the egg, sausage and tomato pieces to the center of the tortilla. Carefully tuck the ends in, and then roll up the sides.
6) Return the frying pan to the burner and keep on low to medium heat. Place the rolled burrito in the pan with the “open” side down. The heat will help seal the burrito. After a minute, (the timing is not exact — keep an eye on it or it will burn) turn the burrito over and heat the other side.
7) Plate the burrito with the freshly cut fruit and enjoy your breakfast.
This meal only took 10 minutes to build. No matter how rushed you are with all that life throws at you, take a bit of time to be nice to your body.
