Recipe: Something green for St. Patty’s: Pesto pasta
In honor of spring and St. Patrick’s Day, fix something relatively healthy and green. This simple pesto pasta can be made with any pasta you choose: penne, bow tie or cavatappi. Anything works.
Ingredients:
— Cavatappi pasta
— Pesto
— Olive oil
— Sun dried tomatoes
— Pine nuts
Directions:
1) Bring water (enough to cover the pasta) to a boil in a large pot. Add the pasta, and cook until al dente. Depending on the type of pasta you choose, the cook time will vary. Usually it is between eight and 11 minutes.
2) Drain the pasta and return to the pot.
3) In a separate pan, heat a bit of olive oil, and lightly toast the pine nuts.
4) Add pesto and olive oil to the pasta, and cook lightly.
5) Chop the sun dried tomatoes to your desired thickness, and add to the pasta.
6) Stir in the toasted pine nuts.
Serve the pasta with a bit of grated Parmesan cheese, if you have it.
The cooking process for this pasta takes less than 20 minutes. The pasta is simple and easy to make. Experiment with different ingredients to liven up your green pasta.
