Homemade vegetable pot pie satisfies in a pinch
When it comes to comfort food, pot pie is a staple. This homemade concoction infuses the tastes of home with the simplicity required by busy schedules and homework deadlines. While frozen pot pies can be done in a pinch, there is nothing like fresh, homemade comfort food.
What you’ll need:
• A pie pan or baking dish
• Olive oil
• Garlic cloves, chopped
• Green onions, chopped
• Two medium carrots, peeled and chopped
• Fennel, chopped
• Four red potatoes, chopped
• Corn kernels, fresh or frozen
• Peas, fresh or frozen
• 2 cups vegetable broth
• 2 tablespoons flour
• Puff pastry or baking dough
Let the cooking begin:
1) Preheat the oven to 375 degrees.
2) In a large pot, heat the olive oil and sauté the onions, carrots and fennel for around five minutes.
3) Stir in the flour and garlic.
4) Add the potatoes and veg etable broth. Bring to a boil, and cook for 10 minutes.
5) Add the corn, peas and any other vegetables.
6) Add the filling to the pie pan or baking dish. Cover with the pastry or dough, making sure to cover the dish completely.
7) Bake for 20 to 25 minutes.
8) Let the pot pie cool and serve to happy people.
