Recipe: Spectacular salmon: Easy to make, easy to eat

Finding good quality, fresh salmon in Wichita is not always easy.

When you do come across some, catch it fast. Salmon is one nutritious fish. Besides being a great source of protein, salmon contains numerous vitamins and minerals, including potassium and vitamin B12. Salmon also contains omega-3 fatty acids, which contribute to healthy brain function, among other health benefits.  

I find salmon to be relatively easy to cook, too. With minimal effort, you can have delicious salmon on your plate in less than 20 minutes.

While there are many ways to cook the orange fish — baking, grilling, frying — pan-frying is relatively easy to manage.

Start by heating a large skillet on medium heat.

Prepare the salmon. Get precut salmon fillets from the grocery store. Fresh is best. Open the salmon and season with salt.

Once the pan is hot, carefully place the salmon fillets in the bottom of the pan, skin side down.

Cook for six to eight minutes. Carefully flip the fillets over, and cook for up to six minutes (depending on how pink you want your salmon).

Remove the salmon fillets from heat and serve with your choice of accouterments. Pair the warm salmon with a bit of pasta. Serve it — hot or cold — on top of a green salad. The fish is simple to make and goes with almost anything.
